Group 2: Processed Culinary Ingredients

Group 3: Processed Foods

Group 4: Ultra-Processed Foods (UPFs)

The Ingredient List Test
If the ingredient list contains more than five items, or includes substances you would not find in a home kitchen, it is likely ultra-processed. Look for:
- Ingredients ending in "-ose" (maltose, dextrose, fructose)
- Hydrogenated or partially hydrogenated oils
- Protein isolates or concentrates
- Emulsifiers (lecithin, polysorbate, mono- and diglycerides)
- Flavor enhancers (MSG, yeast extract, "natural flavors")
- Artificial colors (anything with a number after it)
The Fiber-to-Sugar Ratio
For grain-based products, divide the grams of fiber by the grams of sugar. A ratio above 1:1 is good. Ultra-processed grain products almost always have far more sugar than fiber.
The Shelf Life Test
If a product can sit on a shelf for months or years without spoiling, significant processing was required to achieve that. Real food spoils relatively quickly.
The Kitchen Test
Could you make this product at home with ingredients from a regular grocery store? If the answer is no, it is ultra-processed. You can make bread at home. You cannot make a Twinkie at home.

The evidence against ultra-processed foods extends far beyond weight gain:
